Beef Casserole with an Orange Twist.

Here is something i am whipping up for dinner tonight. I am making it up based on what i have in the cupboard and as i go along so i hope it comes out well. I had planned to make this up in the slow cooker but i didn't have enough time for that today so its just in the oven in this casserole dish on low for a couple of hours.

Ingredients are:

Beef (cheap cut)
Beef stock (just the cubes) (about a litre)
Tin Tomatoes
Bacon (optional)
1 Orange cut into large chunks (take this out when finished cooking)
Veggies: of Celery, onion, mushrooms, carrot
Herbs: Garlic, Rosemary, Thyme (whatever was in the garden)


Salt & Pepper, Sugar
Here are the steps:
1. Chopped up all my veggies stuck them in a big bowl









2. Floured the meat, stuck the meat in a glad bag and shook it up. The easiest no mess way to do this i have found.










3. Started browning the meat in my dish










4. You are supposed to do this in batches but ended up throwing all the meat in after a small amount of cooking and the bacon. Bits of flour will cook and stick to the bottom of the pan. This is good see next point :)

5. Don't have a photo but what you need to do is lift off those brown cooked bits. This will help to thicken your gravy. So i added a bit of the stock and stirred it hard with a wooden spoon, lifting off all the sticky bits.



6.Put my tin of tomatoes in (mushing the whole tomatoes if you have that), added the whole bowl of veggies, herbs and anything else that was due to go in here. Gave it a big mix around and ensure it was all mixed together.






7. The best bit: Put the lid on and stuck it in the oven to cook (will leave mine for a couple of hours), plan on serving with bit of pasta, but you could do potatoes, rice, bread.
(going to remember to pull out the orange before serving i think it might give it a nice flavour :)
Also plan on having spinach with mine (my oldest keeps wanting to have spinach like popeye and i promised i would cook him some lol).
